Ginger and Apple Millet Porridge
1/3 cup dry amaranth or millet, rinsed
2/3 cup water
1/4 cup chopped apple
1 tsp raisins
1 Tbsp pumpkin seeds
1/2 tsp grated fresh ginger
1/4 tsp vanilla extract
1/4 tsp cinnamon
1/4 cup milk of choice (dairy, rice, hemp or almond)
• Cook the millet and pumpkin seeds in the water, covered, until almost completely done (10-15 minutes).
• If there is no water left, add a little more. Add the chopped apples, vanilla, raisins and ginger and cook until desired consistency (2-5 minutes).
• Serve with the rice milk and cinnamon.
